Timothy works with an array of more than 20 chocolates sourced globally. Spanning from Valrhona's delectable 30% Ariaga to TCHO’s intense 100% unsweetened variety, our collection offers a diverse spectrum of flavors.

With 48 distinct truffle flavors, Timothy chooses the ideal chocolate for each creation. He skillfully blends the ingredients into a delicious ganache filling, ensuring a perfect fusion of taste and texture. Every chocolate is then filled, resulting in a balance that captivates the senses.

CHERRY BLOSSOM IS BACK

Timothy creates a syrup with bitter almonds, cherry blossom honey and tart Michigan cherries. After slowly simmering everything together, he then presses the syrup through a sieve and discards the solids. Then folds his syrup into Republica Del Cacao’s single origin Ecuadorian white chocolate to make the ganache. Then this is enveloped in Valrhona’s 56% Caraque to create a crisp dark chocolate shell.

This Truffle is created with silky milk chocolate and crème fraîche, giving it a slight tang. It’s mostly sweet and finished in a milk and dark chocolate couverture.

This is the first truffle Timothy made back in 1993! Our fresh spearmint truffle is a modern twist of the classic. It is made of dark chocolate and cream infused with fresh spearmint, finished with the dark chocolate couverture. It tastes like it’s straight from the garden!
